Election Day: How are the Candidates Feeling?

A host of GOP candidates will be watching election results at the Water Street Inn.

Here are a few recipe ideas courtesy of Hallmark Channel's "Home & Family” 

VOTER BOOTH TRIVIA BISCUITS GARLIC CHEESE BISCUITS

INGREDIENTS

1 3/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
5 tablespoons butter
1 cup milk
1 cup shredded Cheddar cheese
1/4 cup butter, melted
1 clove garlic, minced

DIRECTIONS

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. In a large bowl, sift together flour, salt and baking powder. Cut in butter until mixture resembles coarse crumbs. Make a well in the center of flour mixture. Add the milk and cheddar cheese; stir to combine. Drop batter by spoonfuls onto an ungreased baking sheet.
  3. Bake in preheated oven for 12 to 15 minutes, until lightly browned. While biscuits are baking mix melted butter and minced garlic. Brush garlic butter over hot baked biscuits.

SPICY 3-BEAN VEGETABLE CHILI Makes 6 Bowls of Spicy Three-Bean Vegetable Chili

Prep Time: 20 minutes Cook Time: 40 minutes Total Time: 1 hour

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded, minced
  • 1 red bell pepper, seeded, diced
  • 1/2 tsp dried oregano
  • 1/2 tsp chipotle chili powder (or more for spicier chili)
  • 1 tbsp ground cumin
  • 2 tbsp ancho chili powder (or other chili powder)
  • 1 cup tomato sauce
  • 4 cups water
  • 1 (15-oz) can black beans, drained
  • 1 (15-oz) can garbanzo beans, drained
  • 1 (15-oz) can red kidney beans, drained
  • 1 pound package frozen sweet corn, thawed, drained well
  • salt and fresh ground black pepper to taste
  • 6 oz pepper Jack cheese, shredded

Preparation: Add the olive oil and onions to a pot, and place over medium heat. Saute the onions until they are translucent, about 5-6 minutes. Add the garlic, jalapeño, red bell pepper, oregano, chipotle, cumin, and chili powder. Cook stirring for 3 minutes. Add the tomato sauce, water, black beans, pinto beans, kidney beans, and corn. Bring to a simmer, reduce heat to low, and cook for 20 minutes.

After 20 minutes, take a potato masher, or spatula, and mash some of the beans against the bottom of the pot. This will thicken the chili. The more you mash the thicker it will become as it cooks. For a medium-thick texture mash about 1/4 of the beans (you can always mash more later). Stir well and simmer for another 10 minutes.

Serve in bowls with shredded cheese on top.

Other topping options: cilantro, sour cream, green onions etc.

RED, WHITE & BLUE PARFAIT

Ingredients

  • 1 1/2 teaspoons lemon juice (fresh)
  • fresh mint leaves (to garnish)
  • 2 cups strawberries (fresh, sprinkled with sugar)
  • 2 cups blueberries (fresh, sprinkled with sugar)
  • 8 ounces cream cheese
  • 1 cup whipping cream
  • 6 tablespoons powdered sugar

Instructions

In a medium mixing bowl, place the cream cheese, lemon juice, and powdered sugar. Whip with an electric mixer until fluffy. Slowly add whipping cream, a little at a time, and continue beating until the cream is incorporated and the mixture is fluffy.

Into tall wine glasses or champagne flutes, spoon some blueberries into the glass, then a dollop of whipped cream mixture.  Add some strawberries or raspberries, then another dollop of whipped cream. Continue until glass is full, then garnish with mint leaves or lemon balm.

Optional: For added crunch, you can start the layering by putting chopped shortbread cookies, granola or even cubed pound cake.
